Lemon Garlic Chicken Thighs¶
Lemon garlic chicken thighs served with roasted baby potatoes and broccoli. This dinner is designed to become a Mediterranean Chicken Wrap for a work-box meal. Version: 0.3.0.

Ingredients¶
Chicken¶
- 2 lb boneless skinless chicken thighs
- 2 tbsp olive oil
- 2 tbsp jarred minced garlic
- Zest of 1 lemon
- Juice of 1 lemon
- 1 tsp Italian seasoning
- 1 tsp kosher salt
- 1/2 tsp black pepper
Sides¶
- Roasted baby potatoes
- Roasted broccoli
Instructions¶
Marinate the Chicken¶
- Combine the chicken thighs, olive oil, minced garlic, lemon zest, lemon juice, Italian seasoning, kosher salt, and black pepper.
- Marinate for 30 minutes if time allows.
Roast the Sides¶
- Heat the oven to 425°F.
- Roast the baby potatoes for 20 minutes.
- Add the broccoli and continue roasting until tender.
Cook the Chicken¶
- Grill or pan-sear the chicken thighs until they reach 175°F.
- Rest briefly before slicing.
- Serve with roasted potatoes and broccoli.
- Reserve sliced chicken for Mediterranean Chicken Wraps.

- Mix the yogurt sauce.
- Slice the leftover chicken.
- Assemble the wrap or keep the ingredients separate.
At Work / At 2:00 AM¶
Enjoy cold.
