Grilled Flank Steak with Chimichurri

A simple summer grilling recipe with tender sliced flank steak and bright chimichurri. This dinner is designed to become Chimichurri Steak Salad for a work-box meal. Version: 0.3.0.

Ingredients

Steak

  • 1 1/2 to 2 lb flank steak
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder

Chimichurri

  • 1 cup finely chopped parsley
  • 1/4 cup finely chopped cilantro, optional
  • 3 tbsp red wine vinegar
  • 1/2 cup olive oil
  • 2 tbsp jarred minced garlic
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes
  • Salt and pepper, to taste

Suggested Sides

  • Grilled asparagus
  • Corn on the cob

Instructions

Prepare the Chimichurri

  1. Combine the parsley, cilantro, red wine vinegar, olive oil, minced garlic, oregano, and crushed red pepper flakes.
  2. Season with salt and pepper to taste.
  3. Stir well and let rest for at least 20 minutes.

Prepare the Steak

  1. Remove the steak from the refrigerator 20 to 30 minutes before grilling.
  2. Pat the steak dry.
  3. Rub the steak with olive oil.
  4. Season both sides with kosher salt, black pepper, and garlic powder.

Grill

  1. Preheat the grill to medium-high heat.
  2. Grill the steak for 4 to 6 minutes per side.
  3. Cook to 130 to 135°F for medium-rare or 135 to 145°F for medium.
  4. Rest the steak for 10 minutes.
  5. Slice thinly against the grain.

Serve

  1. Serve with grilled asparagus, corn on the cob, and generous spoonfuls of chimichurri.
  2. Reserve enough steak and chimichurri for Chimichurri Steak Salad.

Additional Ingredients

  • Romaine
  • Cucumber
  • Thinly sliced red onion
  • Crumbled feta, optional
  • Extra chimichurri

Before Leaving for Work

  1. Slice the remaining steak thinly against the grain.
  2. Chop the romaine.
  3. Dice the cucumber.
  4. Thinly slice the red onion.
  5. Pack the vegetables separately if possible.
  6. Pack a small container of chimichurri.
  7. Pack feta separately if using.

At Work / At 2:00 AM

  1. Toss the vegetables together.
  2. Top with the sliced steak.
  3. Spoon chimichurri over the salad.
  4. Add feta if desired.

Make-Ahead Notes

  • Chimichurri can be made several hours ahead.
  • The steak can be seasoned shortly before grilling.

Storage and Leftovers

  • Refrigerate steak and chimichurri separately for up to 4 days.
  • Chimichurri develops more flavor overnight.
  • Keep salad vegetables separate until serving.
